A feast of delicate flavors at Bohol Eats
Highlighting gastronomic adventures in Bohol, Bohol Eats was created to feature award-winning chefs preparing a special menu using local produce. And on its 11th run, Bohol Eats had Chef Rob Pengson of the Aleanza Institute and Beso Beso to prepare his signature flair on the island.

The menu we tried was BEats 11, a five-course meal with the theme of a Soirée Magnifique. This French menu features familiar local ingredients such as pumpkin, goat cheese, walnuts, mussels, shrimp, and pork ribs. Though the dishes are foreign-sounding, a taste of them surprised us with familiar Filipino flavors. What was an ordinary vegetable in the province was transformed into a tasty and well-plated dish!
Spiced Pumpkin Tart with Pear and Herb Chutney
The first course is a pintxos-sized appetizer, Spiced Pumpkin Tart with Pear and Herb Chutney. Spicy and aromatic, the pumpkin tart was placed on top of a crispy wonton wrapper crust, adding crispiness and flavor to the meal.
It was then followed by a beautifully plated serving of Salad of Crudites. It had red beets and greens and was topped with locally sourced goat-cheese and walnut garnishing. The contrasting flavors were such a pleasure to taste, thanks to the mildly bitter flavor of the lettuce, the sweet and sour taste of beets, the crunch of walnuts, and the goat cheese.
They served Parisienne Gnocchi with a bouillabaisse seafood bisque topped with gruyere for the seafood course. Its no-frills presentation will surprise you with how it tastes– the mussels and shrimp added depth to the tasty sauce, and the basil provided a refreshing flavor to the dish.
Chef Rob served Pork Scallopini with Pork Trotter, green peppercorn sauce, and mashed potatoes for the meat course. The tender pork trotter was cooked overnight, while the peppercorn sauce that came with it provided a creamy, smoky, and light flavor to the meat.
The five-course degustation perfectly ended with a serving of Parisienne Parfait. It had a perfect mix of vanilla ice cream, mango sorbet drizzled with passionfruit syrup, creme Anglaise infused with vanilla bean and cardamom, and a coconut whipped-cream topping.
